SpamAssassin also has a very powerfull feature: the AutoWhiteList, meaning that even if a mail that looks as a spam comes from somebody that usually send non-spam mails, it will pass through without being flagged as spam.

This auto-adaptative feature is really powerfull and leads to a very high rate of accurancy after some weeks of usage.

You have to collect SPAM mail in a directory, where you point your 'tuning' 
to. So, it builds a blacklist. Of course, you can also build a whitelist.

What Spamassassin does is adding a header describing that the mail is spam. 
With a filter, you could simply filter these messages into a special folder.
